Preparation Steps:

  1. Boil water with salt and add it gradually to the rice flour, mixing continuously to form a soft, pliable dough.

  2. Knead the dough gently until smooth and non-sticky. Let it rest covered for a few minutes.

  3. Fill the dough into an idiyappam press or string hopper press.

  4. Press the dough in circular motions over greased idli plates or banana leaves to form thin circular nests or layers.

  5. Steam the pressed idiyappam in a steamer or idli pot for about 8-10 minutes until cooked through.

  6. Serve hot.
