Anchovy (Nethili) Fish Curry

Preparation Highlights:

• Heat oil, splutter mustard seeds and fenugreek seeds, then saute shallots, green chilies, and curry leaves. Add ginger-garlic paste and chopped tomatoes, followed by turmeric, chili powder, coriander powder. Mix tamarind pulp and water; bring to boil. Add cleaned anchovies, simmer gently without stirring much to avoid breaking the fish. Optionally add coconut milk and cook until the curry thickens. Garnish with fresh coriander leaves.
