Preparation Steps:

  • Marinate the prawns with yogurt, turmeric, chili powder, lemon juice, and salt, and set aside.

  • Dry roast whole spices and dry chilies, then grind with garlic and tamarind pulp to make the ghee roast masala paste.

  • Shallow fry the marinated prawns in ghee until they turn pink and slightly golden; set aside.

  • In the same pan, fry the ghee roast masala paste in ghee until oil separates and the masala turns dark and aromatic.

  • Add back the prawns and curry leaves, mix well, and roast until the prawns are well coated and the flavors meld, with the oil slightly oozing out.

  • Serve piping hot with Neer dosa, chapati, or steamed rice.
